The latest science and research on the role of dairy foods in nutrition and health
EMF provides science-based information to health and nutrition professionals, academics and nutrition students on the role of dairy foods as part of healthy, sustainable diets. This includes organising events such as conferences, symposia and webinars.
This section contains the summaries and presentations from these events, together with scientific overviews of dairy and health topics.
It is increasingly recognised that the effects of milk and dairy foods on health extends beyond the individual nutrients they contain. This is the dairy matrix effect.
Dairy foods naturally contain a variety of nutrients and bioactive components within complex physical structures. The interactions between them can influence factors such as digestion and absorption and so the metabolic response. This can result in a different outcome than might be predicted by nutrient content alone.
Cheese, for example, does not have the negative effect on blood lipids and heart health predicted by its fat content. Similarly, dairy’s positive impact on bone goes beyond a ‘calcium effect’.
