The Dairy Matrix

It is increasingly recognised that the effects of milk and dairy foods on health extends beyond the individual nutrients they contain. This is the dairy matrix effect.

Dairy foods naturally contain a variety of nutrients and bioactive components within complex physical structures. The interactions between them can influence factors such as digestion and absorption and so the metabolic response. This can result in a different outcome than might be predicted by nutrient content alone.

Cheese, for example, does not have the negative effect on blood lipids and heart health predicted by its fat content. Similarly, dairy’s positive impact on bone goes beyond a ‘calcium effect’.
